First, this is commonly referred to as a hto pulldown. See, the evaporator has two primary functions: the first must take place before the second. First the humidity has to be brought down to a feasible 50% which is the latent heat process. Then the sensible heat process can begin which is the actual decrease in temperature. besides, it sounds like that space's cooling load is way over sized fro that 2.5 ton unit and the evaporator is certainly not riding the curve with the metering device.
